white paint

I have a problem with pigmented white paint over hard maple that drive me crazy for long time. The final result it's fine but when I look it from the side the entire surface doesn't look even, there are shine areas and other that are less shine. The final coat is Enduro white satin water base. Here my schedule

I sand with orbital sander 180 g. over hard maple (I know that maybe 180 it's a little fine but because there are some filler involved I try to send the filler less aggressive I can in order to keep it the same level of the wood, I tried to sand 220 but it's the same)
2/3 coat of General finishes Enduro white undercoat water base, (I sand 220 first coat and 400 second coat)
2 coat of Enduro white Poly satin (I sand 600 the firs coat)

I'm sure that it isn't a spray gun problem because I sprayed a test over a plexiglass piece and it look smooth like a glass, seem to me that there are some area of the wood that absorb more paint than the other , here a picture

I would put one coat of Zinsser bin on followed by General primer and then topcoat. Bin seems to seal
wood better than most water base primers.

Sure looks like a gun problem. Are you box coating it? How many coats?

I did two coats of primer and two coat of white. What is box coating it?

A box coat is making your spray passes 90 degrees to each other. You'd spray passes left and right and then immediately spray passes up and down. This gets rid of most stripping.

If you think that it is absorbing into the wood differently then you need to apply more primer and sand more aggressively between coats. Or thin the primer less. Or use a higher build primer.

The prime coat should be used to flatten the surface for the paint coat. Before the paint goes on the primer coat should be flat and true, you shouldn't see any wood color peeking through.

And depending on the level of finish you are looking for depends on how flat a surface you will need your primer to produce.

I would guess that you are getting an inconsist surface because of the 600 grit step. You will end up with some spots where there is no gloss and others that are so-so. As the paper dulls it will get worse. This can affect flowout.

Generally:
wood 150 grit
primer 240 grit
topcoats 320 grit

Waterborne clears can benefit from 400 if applying many coats, 600 is going a bit too far in the wrong direction.

You can't see 320 scratches in the finish so why go less aggressive.
