Looks like a piece of wild granite!
The veneer matching leaves something to be desired. The two leaves on the right are slip-matched, then a leaf from another flitch, then another leaf from the original flitch, but book-matched to the first two leaves. I would have gone with a flitch match myself, it would give a more uniform look across the panel.
I've never worked with quilted veneer. So don't really know, but could it be that quilted is so wild (changes so much)that normal veneer choices don't apply?

No, quilted Maple is cut into veneer the same as "regular" Maple, really no difference other than the figure in the wood. It is available in flitch form (1/2 log, cut into veneer) and I have utilized it many times.
That veneer face is just sort of a half way in between face; it's not flitch matched, but it's not random matched either.
Was there a question about the headboard that I missed?
