One way to produce smoke or ebonized oak is to brush a coat of acidified iron solution onto the wood. The iron reacts with the oak's naturally high amount of tannins to turn the oak grey to black in color.
Here is the method- Take some 0000 steel wool and tear it into small pieces (say 1"x1") and place into a glass or plastic container. Pour vinegar into the container sufficient to cover the steel wool. Let this sit overnight with the lid on but left loose for gas to escape. Place outside or you will be smelling vinegar all night. The acetic acid in the vinegar will react with the steel wool to dissolve some of the iron into the solution. The following morning, pour the liquid through some cheesecloth into a clean container. This will remove most of the steel particles from the solution. After you have sanded the oak, wet it with water, let dry and sand again to remove the "whiskers". Now, paint the solution onto the oak. A light coat will turn the wood grey, while a heavy coat(s) will turn the wood jet black. After the solution dries, top coat it with either an oil based finish, or seal with shellac before applying a top coat.
This will work for woods which are naturally high in tannins such as white oak, but will turn other woods various shades of grey to black.
