So what is the benefits of having a multiple zone ??

I don't think it will save you energy but it will concentrate vacuum on one side of the table and hold things down better.
It sounds like this will be your first machine. If that is true I would get the zoned vacuum. You really can't imagine all the things you will want to do with it until you have it. It keeps your options open.

I am taking it slow and getting to know all about it

Bill is correct AJ. It won't save you energy but it will concentrate the vacuum. It's also important to look at the vacuum table construction. Is it an open table with a phenolic top or is it two pieces of phenolic that has a grid pattern machined in between the two. The open bed with the phenolic top will allow more volume.
In theory you will save energy. The more vacuum you pull, the less energy the pump draws so if you can close off unused zones, you save $.
How much, who knows? Maybe a cup of coffee a month? But you will save something.
