This is NICE! I'm gonna build one for my dad soon! I'm a rookie at the woodwork game, but I'm hooked! I have one question,how did you join all the ends together on the top? Did you run dowels through em?
It's just a massive glue up.
Use food safe glue. Titebond III is what I use for end grain cutting boards.
If you're new to things you might want to watch Marc. He does a great job. The method he uses is pretty much what I do.

First you need to figure out the overall size. Then edge glue, straighten, flatten, and rip into blocks. You can then flip the blocks on end for the end grain.
The top was glued into three smaller sections and then those three sections were glued into one very large and heavy top.
