Please Help with table I'm sanding - question

Hoping you guys can help. I sanded a table yesterday made of Ironwood. It was a pretty dark stained and probably a polyurethane on it. It's a dining table. I was so pleased with the top yesterday. It was nice and light. BUt I swear it darked overnight. And everytime I wipe it down with a damp papertowel, there is so much red stain on it. I assume that what must be happening is that the tannins are coming to the surface. Even though I am inside and not in the sun. IS this true? Is there something that I can wipe it with that will stop this process? I'm ready to seal it with a clear polyacrylic water-based sealer, but want to make sure the red is off the surface. Any suggestions? Am I going crazy?

Why are you putting a big box store product on it? Do you always use cheap consumer grade finishes in your business? You sure it will stick to ironwood?

Flip the table top over and experiment on the underside.
