I also thought about using GRK shim screws for the actual install. Probably shim the hinge side solid and use the GRK's on the opposite side to tweak the reveal between the door and jamb. They look like a neat idea. Has anyone tried them out there?

A good fit to walls and jambs takes some finesse, and locked into splines or pre-nailed trim doesn't afford you that luxury. Achieving that good fit may mean you have to roll the casing a little and alter the degree of your miters, or you may actually have to plane a little of the back of the moulding to get it to sit good (reason for backout) to the wall.
If you have decent carpentry skills, holding reveals both in the door hanging and casing should not be difficult, and doesn't require fancy screws or overkill joinery. Also you may want to get a price from a millwork shop, your time is money also.

Selfishly I do like the idea of no nails - I could always skip the spline if I had to tweak it, or leave it undersize to permit some roll. This all has to go up pre-shop finished and I am not a fan of fill or site touchups - but maybe that is life. I know nobody else ever notices, and you don't get paid for that.
I like the idea of relieving the back of the casing so there is less material to remove should some finessing be required. I am oversizing the jamb 1/16 or so to permit some drywall deviation but I hear what you are saying about what one inherits in that department. I will bring a 26oz drywall tenderizer either way.

Casing and base are always backed out unless there is some compelling reason not to. It takes no more time and makes the install better. We have run stop with a tongue and that fits very loosely in a groove in the jamb when specified. Again, it takes no more time to run and very little setup on the molder. I think the spline and screws are an unnecessary complication. That and they take away some of the fudge factor ability to make a visually good fit.

When we do this, mostly for wall panels prefabbed in the shop, we mill the parts so the tongues are part of the jamb. They are slightly undersize so they will fit the plows easily. Mill the tongue onto the stops also. We usually end up pinning in a few places, but clamps and glue will do it in the shop. This makes for less pieces/parts, and you don't have to make or handle bunches of spline stock. Depending upon the job and who is doing install, it is easy to assemble a lot of this in the shop, then it goes up real fast on site.

It is the difference between letís say perfection and production. I think your idea is great and you will end up with a beautiful job, unfortunately in my market if I installed like that I would soon be out of work. Everything is based on speed and production, and the finishers fill nail holes so all good. We would screw the frame and brad nail the stop and the casing.
