Walnut cabinets no finish

We have a client that wants her butlers pantry built out of walnut , but with no finish . My question is there some kind of finish that would not change the color of walnut when applied. I know there are all kinds of new European finishes available that offer a whole lot of different options other than the standard conversion varnishes . Any ideas would be great , I'm not comfortable installing raw cabinets knowing that there will never be finish applied , the first couple of stains from wine or greasy fingerprints I will never hear the end of it .

I've used a 2K Poly and then sanded with 320 and then cleaned it off with denatured alcohol and it looks very flat, dead flat. Not really sure what kind of protection it will give with the heavy scratch pattern in there. And I also did it on Sapele'. I'm sure it has to be better than raw.

We just did a solid walnut top where the customer wanted the same thing. Used Sirca Natural Effects 6OPU400.

Almost all of the water borne finishes are water white. A word of caution though, some have been tinted to look more yellow. Carb acrylic as a seal is clear also. There are additives that will prevent UV color changes to the finish but not to the wood.
