Our finish is conversion varnish. Are there any peelcoat type films (rolls of plastic, not spray-on) anyone suggest that won't harden or wreck the color/sheen of the cabinets?

I know it won't protect it from granite guys ramming 400 pounds of stone into it, but it will help reduce the number of reworks we eventually get.

I, and probably everyone, have had thr nightmare of trying to peel those off that have eithet been on too long or are maybe too aggressive and it winds up being a nightmare to get off. Cant help but to think perhaps ordering sheets or rolls of corrugated and just shrink warapping or taping it on after install would give you better all around protection. Just my $0.02
